Ingredients

  • 920 g Bread Flour

  • 5 g Yeast

  • 20 g Salt

  • 555 ml Water

  • 50 ml Canola Oil or Olive oil

  • 225 ml GoodNom Fresh Gata

  • 225 ml Pineapple juice

  • 120 ml Chicken stock

  • To Taste Salt and Pepper

  • To Taste Lucky Me! NamNam

  • 100 g Cornstarch (for slurry)

  • 100 ml Water (for slurry)

  • 200 g Pizza Topping Cheese

  • 150 g Pepperoni

  • 30 g Basil

Instructions

Dough:

  1. In a mixer with dough hook attachment, combine bread flour, yeast, salt, and water. Mix until well combined and it forms into a dough.

  2. In a Container, add oil and spread on all sides. Transfer the dough and coat with oil. Cover and leave in a cool dry place overnight.

  3. Roll and portion into 6. about 160 g per ball.

Gata Bechamel

  1. Mix cornstarch and water until well incorporated.

  2. In a saucepan, mix pineapple juice, chicken bouillon dissolved in water, and bring to boil. Once boiling, pour in some of the slurry to slightly thicken the mixture. Make sure it is still runny.

  3. Add in the coconut milk and mix well. If the coconut milk starts to separate, adjust using the slurry. Season with Lucky Me! Namnam and salt and pepper.

  4. Bring to a boil and set aside once thick enough and creamy. Cover with cling film.

Pizza:

  1. Preheat oven at 260 ° C.

  2. Slightly dust the pizza pan with flour. Flatten the pizza dough and shape it into a heart ensuring that the middle part is slightly thinner than the edge.

  3. Coat the basil leaf with oil to avoid burning.

  4. Spread the bechamel in the middle, top with cheese, basil, and heart shaped pepperoni.

  5. Bake in the oven for 6-7 minutes, Rest for a bit before slicing.

  6. Serve and enjoy.
